Simple Fish Curry

Ingredients

  • ½ cup olive oil
  • 1/2 brown onion sliced
  • 1/2 tablespoon finely chopped ginger
  • 2 cloves fresh garlic thinly sliced
  • 1 teaspoon sea salt
  • 1½ teaspoons garam masala
  • 2 teaspoons paprika
  • 1½ teaspoons turmeric powder
  • ½ cup chicken stock or water
  • 400 g blue eye cod  or snapper, skinned and cut into 4cm cubes
  • ¾ cup plain yoghurt or coyo (coconut yogurt)
  • 20 ml lime juice
Instructions

 


  1. Heat olive oil in a small frying pan, add onion, ginger, garlic and salt and sweat over low-medium heat for 5 minutes, stirring occasionally, or until onion is soft and starting to caramelize.
  2. Add spices and cook, stirring constantly for 1-2 minutes or until aromatic.
  3. Add stock or water and simmer for 5-10 minutes.
  4. Add fish to pan and stir gently to cover fish with sauce and simmer for 2 minutes.
  5. Add yoghurt and lime juice, remove from heat and stir gently.
  6. Serve with steamed basmati or brown rice and rocket salad or steamed greens.

NOTE:

If you choose to use vegetables (sweet potato, & chickpeas work well)  instead of fish,  simply add additional stock and cook sweet potato for around 10 minutes to soften.

This is awesome

I have made this recipe twice this week and both myself and my dinner guests loved it. On both occasions I used Blue Grenadier and added pumpkin at the same time as adding the stock. Also threw in a few frozen peas. As Lorna says it is quick, easy and extremely tasty!
